It’s very rare that I make anything with chocolate in it as Andy gets seriously bad migraines when he comes within 20 feet of it. But he’s away right now,so my chocomania can have free rein for a bit.

I was going to make an ordinary apple sponge for supper tonight,but I decided to use up some half empty packets that I had lying about in the cupboard. Apple and Chocolate Fudge Pudding
- 125g self raising flour
- 125g butter
- 125g sugar
- 2tsp good cocoa powder
- 1tsp instant coffee
- 1tsp vanilla extract
- 2 eggs
- 30g dried cranberries
- 50g white chocolate chips
- 750g frozen apples
Preheat the oven to 220C. Layer the fruit in a square baking pan (a ceramic serving one is fine). Measure out the rest of the ingredients and whisk together until fully amalgamated. Spread the batter over the fruit and pop into the oven for 25 –35 minutes until a skewer inserted into it comes out clean and the fruit is soft. see also : Delia’s Ginger Cake recipe
