Strawberry Popsicles Recipe – The strawberry season marks the beginning of summer for me. Usually we start seeing them mid-June with the peak around St-Jean-Baptiste and Canada Day weekends. This year, the season got off to an early start and we’re actually near the end. Although, my backyard strawberries seem to be entering their second crop!
Usually I just eat my strawberries fresh, but last week on one of the hotter days I remembered that I had recently picked up some popsicle moulds at Ikea. So of course I made strawberry popsicles. To mix it up a bit I also added fresh mint from my garden. (This week I used basil!)
Creamy Strawberry-Mint Popsicles
- 1 cup plain yogourt (I used Greek)
- 1 cup chopped strawberries
- Sweetener to taste (honey is nice)
- 1 Tbs of finely chopped mint
Using a hand blender, combine all the ingredients. Spoon the mixture into the popsicle makers and freeze! That’s it!
These make a great high protein, low-calorie snack for hot afternoons. Perfect for keeping your hunger at bay until dinner.
